Nito Vermouth: A Modern Take on a Timeless Aperitivo
At Nito Vermouth, the focus isn’t just on what’s in the glass. It’s everything that happens around it.
Born from time spent in Spain and produced in the hills of Catalonia, George & Rosie created Nito Vermouth around a rich Tempranillo base, infused with a complex blend of botanicals. The result is a vermouth that feels both familiar and distinctly modern. It is bold, zesty, and designed for slow, sociable drinking.
Vermouth, traditionally an aromatised fortified wine infused with herbs, roots and spices, has long been a cornerstone of classic cocktail culture, from the Manhattan to the Negroni. It is now increasingly being appreciated in its own right.
Nito leans into this shift. With 52 botanicals layered over its wine base, including wormwood, citrus, spice and florals, it delivers a full-bodied, bittersweet profile with a long, lingering finish.
For us, it’s the kind of vermouth that works just as well at a wedding drinks reception as it does at golden hour with a single ice cube and an orange slice.
How We Serve It
1. Over Ice or as a spritz
The simplest way to enjoy Nito is often the best.
Served over ice with a slice of orange, it opens up into something bright, herbal and gently bitter. It’s a perfect aperitivo serve that encourages guests to slow down and settle in.
Top with a good quality Cava and a splash of soda water and you have yourself a Nito Spritz.
2. James’ serve: Bobby Burns #2
A whisky-led classic that gives the vermouth space to shine.
Ingredients:
40ml Scotch whisky
25ml Nito Vermouth
10ml Bénédictine
2 dashes Angostura bitters
Method:
Stir all ingredients over ice until well chilled. Strain into a rocks glass with fresh ice.
Garnish: Lemon peel
Why it works:
The richness of the Scotch pairs beautifully with Nito’s herbal depth. The Maraschino adds a subtle fruity note that rounds the drink out.
3. Theo’s serve: La Rosita
A bold, bittersweet serve that bridges classic and contemporary.
Ingredients:
30ml tequila (blanco or reposado)
25ml Nito Vermouth
20ml Campari
20ml dry vermouth
2 dashes Angostura bitters
Method:
Stir over ice and strain into a chilled Nick & Nora.
Garnish: Orange peel
Why it works:
Tequila brings a clean, vegetal backbone that lifts the bitterness and spice of the vermouth. The result is structured, refreshing, and slightly unexpected.

What we particularly like about Nito is its versatility. It works throughout the day as a simple serve for reception drinks, a low-ABV option for guests pacing themselves, or as a key component in more spirit-forward cocktails later in the evening. At events, especially weddings, that flexibility is invaluable. It allows us to offer something that feels considered and different, without overcomplicating service.
